A family member may have it, low iron levels, low vitamin D levels, chronic diarrhea or gastrointestinal problems. You can be tested for this via a new blood test that tests for gluten antibodies in your blood. You can also have a mild gluten intolerance that may not show up in a blood test. According to Peter Green M.D., Director of the Celiac Disease Center at Columbia University people with a mild gluten intolerance may experience irritable bowel syndrome and neurological symptoms like lack of coordination, difficulty walking and slurred speech. Mild causes are hard to diagnose as there is not a test like the test for CD (Celiac Disease). Eliminating wheat, rye, barley and oats that have been proceeded on equipment that processes the previous three allergens is a life long process as there is no cure.Check out dairy products, many people who have allergies to gluten also react to the casein (protein) found in milk products. Eliminate breads, pasta, pretzels, cookies and cereals that contain grains of wheat, barley, rye, bulgur, faro, malt, spelt or triticale.
Check out processed and battered foods that have sauces or seasonings that may have gluten. Corn starch is great but beware of wheat starch and flour used in sauces. READ FOOD LABELS.
However, you can still have a large array of foods and enjoy eating. Choose fresh, frozen or canned fruits and vegetables. Go beyond rice and corn - experiment with amaranth, buckwheat, millet, sorghum, buckwheat, quinoa and teff. Use legumes, such as beans, soy, lentils, garbanzo beans and nuts.
